Made with ripe fruits that have been pureed with sugar, the Gourmandises aux fruits of Delices and Gourmandises have seduced more than one candy addict. If you appreciate the taste of authentic fruits as apples, apricots, pears, passion fruit, strawberries, etc., try these candies. You can buy them or make yours according to this recipe we give you.
What you need for this pastrie of Delices and Gourmandises :
Put the pulp of fruits in a saucepan and warm gently. Then add half of the sugar and the pectin (or the agar-agar) and bring to boil for 5 minutes before adding the rest of the sugar and the glucose syrup. Let the mixture boil for a 5 or 7 minutes and stir it constantly until it is loosen from the sides of the pan. Just before taking the pan off the heat, add the citrus juice and stir for a while.
Pour the fruit jelly into silicone molds of different forms. If you do not have some, pour it into a large flat dish and spread it to have about 3cm in thickness. Let cool.
When it is entirely cooled, put it of the plate and cut it into small pieces with a sharp knife or use pastry cutter to makes shapes of your choice. Roll the pieces into the granulated sugar. Align them on a serving dish.
If you want several colors and aromas, use a pan for each type of fruit you use and display the ingredients according to the quantity of each type of fruit pulp available.
The Gourmandises aux fruits of Delices and Gourmandises can be tasted for tea time or at any time you want to benefit from their aromas.
