Created by Louis Dufour at the end of the XIXth century, the chocolate truffles are part of the holiday seasons traditions. They are very often offered as present at Christmas.
Many recipes and way of preparation of chocolate truffles are available so there can be found many versions of them. The master chocolatiers are vying for finding the most original for the truffles fans. So, some truffles are filled with eau-de-vie and other fine alcohols, fruits as oranges or cherries, coffee cream or beans. Some are rolled in coconut or praline.
Delices and Gourmandises presents you a very simple recipe. You will need dark chocolate, liquid cream, powdered sugar, a vanilla bean that has macerated in a spoon of rum. You will also need cocoa powder for the coating.
Melt the chocolate in bain-marie with the butter. When the mix is very smooth, add the liquid cream and the powdered sugar. Scratch the vanilla seeds and add the rum (facultative).
Let this dough chill in the fridge for about 2 or 3 hours until it is hard enough to be rolled in balls. Make the chocolate balls and roll them in the cocoa powder. Your chocolate truffles are ready to be eaten. Before serving, let them chill again for about 15 minutes in the fridge.
